Saturday (late) morning fry-up

This is my version of the breakfast fry-up after a Friday night of cocktails. Just for one person because Josh neither drinks nor eats fry-ups for breakfast. How shamefully boring of him.

You’ll need:

  1. 2 eggs
  2. 2 rashers of streaky bacon
  3. 2 spears of asparagus
  4. 4-5 button mushrooms (or Swiss brown)
  5. 2 English muffins or toasts
  6. 4 cherry tomatoes (would be nice but I don’t have any)

I start off by frying the bacon slowly in a non-stick frying pan. Because I’m using the streaky bacon it has a lot of fat so I don’t really need anymore oil. After the bacon gives up some oil, add the mushroom slices.

Cook the mushroom until they are brown then add the chopped asparagus.  Move everything around the frying pan to get even heat distribution. If you’re using tomatoes, add them now. After about 2 minutes, crack in the 2 eggs into the frying pan.

And then it’s matter of waiting around until the eggs are cooked to your liking. Once done, use a spatula to carefully place the fry up on a plate. I sprinkle them with a bit of chopped fresh parsley (because I have some lying around) but it’s not necessary. Season with salt and pepper if required.

It’s a fantastic hang-over breakfast. Not that I’m hung over or anything.
